Courvoisier® is one of the few cognac houses to distil “on the lees”, a technique that involves keeping the yeast residue. The final product is separated into three parts: the head, the heart and the tails. Only the clear and pure liquid from the heart is used to craft Courvoisier®.
Test Note:
The Bon Bois and the Fins Bois are distilled without lees, elevating the fruit notes of apple, pear, and grapefruit to the forefront.
